Jenkinson Lake (Take 2)

Jenkinson Lake – June 2019

We liked this lake so much last year we booked immediately when we got home for a lake front spot for this year. We were very happy with our spot, site 10 in the pinecone area but the very best spots are 14, 15 and 16. Keep in mind those sites book up a year in advance.

Friday night we set up camp and made a quick meal from one of our favorite camp cookbooks (The New Camp Cookbook). We have tried many of the meals and have yet to be disappointed. We had lots of company on this trip which made it very lively. Friday night there were 4 of us and Saturday night we had 6! We’ve been wanting to try making pizzas so this was a good opportunity. There really aren’t restaurants near the lake so all of the food had to be made at camp. This lake is truly old school camping.

For the pizzas, I prepared all the toppings at home so it was pretty simple. We used ready dough to make our pizza crusts, let the dough thaw and then rolled out 6 personal size crusts that would fit on the lodge cast iron flat grill pan.
We toasted both sides to a golden brown then let everyone create their own pizza with the variety of toppings we brought. It was really fun to get everyone involved in the meal prep and they were actually very tasty. We will do this again.

Saturday was a relaxing day just sitting by the lake with friends, music and cocktails. Jenkinson Lake is surprising warm for an alpine lake.

Sunday we loaded our Aquaglide Chelan kayak with lunch and set out to explore the waterfall we missed last year. It was about a 2 mile paddle to the falls from the pinecone camp area, up past the boat rental area to the cove on the right. You can dock your kayaks before the little bridge & it’s a small hike from the bridge. It was great exercise but definitely a challenge going there and back. Sato is getting better and more relaxed with each kayak adventure he goes on.

Sunday night we made Cuban chicken with rice (also in the New Camp Cookbook).

it was so delicious, you can see pics on our Instagram @tinyteardroptrips. The lodge 10 quart has been a great purchase. The food is always great and with very little cleanup. I just always do all the chopping at home ahead of time to make it easier.


Jenkinson lake is truly a place to enjoy the beauty of nature and unwind and relax. We will be back next year!
